A review of RIRDC farmed rabbit research revealed that rabbit processing is a significant factor limiting the increase of supply to meet current market demand.
This report describes ways to evaluate, design, construct, and manufacture an online washing, drip, chill system in order to reduce the cost of processing rabbit meat and improve Occupational Health and Safety conditions in plant operations. The report includes processing modifications for export accreditation to Thailand in conjunction with best practice animal welfare procedures.
