Summary
This project will investigate if polyphenols derived from coloured rice can alleviate oxidative stress and inflammation in biological in-vitro, ex-vivo and in-vitro models of obesity. This study will employ the use of polyphenol chemistry (HPLC and bench-top assays), cell culture (microscopy, ELISA, flow cytometry, stem cell assays) and human clinical trials (ex-vivo and acute feeding studies) to identify which coloured rice varieties and their respective polyphenols have the most therapeutic potential in targeting biological pathways associated with obesity-related oxidative stress and inflammation.
