Summary

The Australian ginger industry identified expanding market opportunities as one of the four key priorities areas to focussing on which will ensure a continued premium for Australia ginger. This literature review project proposal aims to address and identify benefits (chemical, health, culinary and/or sensory) associated with ginger and related species, especially those which are of value and interest to the Australia ginger growers.

A comprehensive scope of the literature, including scientific journals, patents, sales and trade data, will be conducted. Information relevant to the identified research questions will be narratively synthesised. In addition to identifying potential benefits of particular ginger species, the literature search will also identify any post-harvest processing techniques and novel products for medical and culinary applications. The expected outcomes from this project will include a scientific evidence report on chemical profile and health benefits of ginger species, differentiated by parameters such as location grown, plant maturity etc. A market opportunity report, outlining new post-harvest processing techniques and potential new species and products that could be explored for the Australian ginger industry.
