Summary

This project aims to identify and evaluate novel bioprotective cultures that can reduce Campylobacter on raw chicken meat. This research will provide the industry with simple, safe and cost-effective approaches to reduce Campylobacter levels on chicken meat, thus lowering the risks associated with food-borne disease.
