There is a wide gap in knowledge about the broader role of starch structure in digestibility. Only one published tool is available to predict rice digestibility from starch structure highlights. In response to this, the objective of this project was to measure multiple levels of starch structure in rice and relate those structures to how quickly we digest rice. To do this, a range of analytical techniques were used to characterise commercial and breeding lines.
