This project will assist with the development of Australian fragrant rices by: investigating the aroma of new breeding lines, · comparing these to imported varieties using both sensory studies and analysis of the volatile components, · determining the effect of nitrogen fertiliser level on rice aroma, · developing methods for early generation screening of rice fragrance, · investigating the biosynthetic and other pathways of volatile component formation.
